I'm not sure it's so clear cut the cyclospora "causes" the disease. I did some speed reading about this and this is from memory but it works like this:
In 1996 clusters of diarrhea outbreaks occurred throughout the United States. Epidemiologists interviewed sick patients and purportedly found that "outbreaks" involved people who all attended, say, ate together at the same social events, and then analyzed the menus of said events, noticed the only thing in common was raspberries, tracked where the raspberries came from from local stores/etc, and tracked the raspberries back to Guatemala.
The parasite was found in the stool samples of nearly everyone who was sick, which certainly SUGGESTS it could be a causative agent of disease (but isn't actually proof - for example, maybe the parasite feeds on some particular toxic stuff that might be in fecal matter, and that's actually the causative agent of disease).
They then traced the raspberries to a handful of Guatemalan farms and reviewed their pesticide spraying practices and saw that they mixed local well water which was potentially contaminated with sewage (as it did not originate from a chlorinated municipal treatment plant).
They tried to actually FIND the parasite ON the raspberries but were unsuccessful until 2020 in a separate incident they found the parasite under a microscope from salad greens originating from the midwestern United States.
Mass parasitological screenings of stool samples from people across Latin America and the United States from the mid/late 1990s to early 2000s showed (supposedly) that (and these were verified by looking in microscopes at stained stool samples to actually *SEE* the parasites):
0% of US Americans with cyclospora did NOT have diarrhea
10-20% of Latin Americans with cyclospora did NOT have diarrhea
Meaning, you can have these parasites in your stool and not be sick, but supposedly only if Latin American "because they are not immunologically naive".
Hrmmm.
Today, though, they are *NOT* looking in microscopes to actually find the parasites, they are using ... PCR.
And last of all as you say scientists can't "grow" this parasite in a Petris dish.
So today I think there is very little evidence to suggest cyclospora is involved at all.
Summary:
1) In the past cyclospora was detected with microscopes, but 10-20% of Latin Americans have this parasite without ill effect
2) Causation was done under assumption of food poisoning traced to Guatemalan farms that used untreated unchlorinated water during pesticide spraying, but it took over 4 years to actually find any produce with cyclospora observable under microscope
3) Today mass diagnostic testing of stool samples AND parasitological screening of produce is done with PCR - *NOT* by observation under a microscope
4) Therefore it is not entirely clear cyclospora causes disease, it is only correlated with (some) disease in times past, and today, it's PCR so we can just ignore the purported causative link entirely since PCR is junk
5) The inability to culture this parasite in a lab and use to form an animal model of the disease casts further doubt on the correlation/causation link established in the mid-late 1990s
